Sigmund was the secret curator of the famous Cheese Museum of Holland, where one could relive the history of cheese making and experience the unique flavor of the best cheese of Holland. Being an expert on the 600 years long tradition of cheese-making where the cheeses were often named after the cities where they originated like Edam, Gouda, Leerdammer, Leyden, Maaslander, and Maasdam, Sigmund was perhaps the most respected authority on the subject. When asked which was his favorite cheese, he would say, "all of them," but he did favor Edam.
